Fresh Pineapple Guava Salsa


-1 handful dates, pitted

-2 cups pineapple, peeled

-1/2 cup pistachio nuts, toasted

-1 tbsp. orange zest

-3 tbsp. dry coconut

-1 lemon, juiced

-1 handful fresh coriander, torn

How to make

Roughly chop pineapple, guava and dates.  Add pistachio nuts, orange zest, coconut, lemon juice and coriander leaves.  Season, toss together and serve with chips, as chutney, etc.
