Classic Fried Plantains

Ingredients

-2 or 3 firm, ripe Meschino plantains (yellow mottled with black spots)

-Sea salt

-Vegetable oil

How to make

-Peel and cut plantains width-wise at a 45 degree angle into 1/4 inch thick slices

-Drizzle oil into a hot skillet on Medium heat (enough to coat bottom of pan)

-Once oil is hot, place plantain in pan and cook for 1.5 minutes

-Flip and continue to cook for 1 minute

-Remove plantains from pan and place on paper towel covered-plate (to soak excess oil)

-Continue frying plantain pieces until batch is complete

-Lightly season with sea salt and serve immediately

Serves 4-6 (depending on how many plantains used)
